No-Bake Cookie Dough Protein Bars

When hunger hits, there is no better snack than our no-bake cookie dough protein bars!

These 7-ingredient, vegan, gluten-free, refined-sugar-free (try to say that 5 times fast) protein bars take no more than 5 MINUTES to prepare. Oh, and they taste waaay better than store-bought, chemical-filled alternatives.

All you need to make these protein bars (aside from the ingredients) is a food processor. These bars are perfect for post-gym refueling or that mid-afternoon slump – so let’s get making! 💪

Yes! All ingredients are vegan. Technically you could use whey protein, but we recommend either pea, hemp, brown rice, or soy protein to keep these bars fully plant-based.

Are these Protein Bars Gluten-Free?

Indeed they are! We use no glutenous ingredients to make these bars. Both coconut and almond flours are naturally gluten-free!

We use just 7 ingredients to make these delicious protein bars! You will need:

  • Coconut flour
  • Almond flour
  • Vanilla protein powder
  • Maple syrup
  • Cashew butter
  • Almond milk
  • Chocolate chunks

Turn that oven off – these are *no-bake* bars!

Start by adding the coconut flour, almond flour, and vanilla protein powder to a food processor then pulsing until combined.

Add in the maple syrup, cashew butter, and almond milk, and pulse again until the mixture sticks together. You should see it come together into a ball. That’s how you’ll know it’s ready!

Transfer this mixture to a piece of parchment paper and fold in as many chocolate chunks (or chips) as you like.

Using a rolling pin, roll out the protein cookie dough into a square. Transfer to the fridge for at least 30 minutes (up to an hour) to firm up.

When you are ready to serve, use a knife to cut into bars (this recipe makes 8 bars), then enjoy whenever hunger strikes!

Our bars are certainly healthier than most store-bought options, as we use just 7 ingredients, all of which are wholefoods based. We also use maple syrup instead of refined sugar, which is a little healthier due to the presence of several nutrients.
