Cookies are a vital treat. Protein is a key macronutrient that helps us build muscle, and maintain great skin, hair and nails. So we have combined the two in our incredible Chocolate Chunk Vegan Protein Cookies! 🍪

These cookies are light, soft, airy and a tad cakey, making them a morish treat that’s perfect for snack time or after the gym.

You can use your favorite plant-based protein powder along with some other easy ingredients like applesauce and almond flour. All you need is around 10 minutes of active time, then some baking, and they are done.

So easy, sooo satisfying!

Are these Cookies Vegan?

While many cookies are not vegan, these cookies are 100% plant-based! This is because we use vegan butter instead of dairy, with applesauce as our egg replacer.

You can try making our easy vegan butter, or just use a store-bought version (we recommend either Earth Balance or Miyokos).

Are these Cookies Gluten-Free?

Yes! We use gluten-free baking flour and naturally gluten-free almond flour in this entirely gluten-free recipe.

What are Chocolate Chunk Vegan Protein Cookies Made Of?

Ready to make these cookies? You’ll need to gather some simple ingredients first. Luckily, many of these things should already be in your kitchen.

Here’s what you need:

  • Vegan butter
  • Applesauce
  • Coconut sugar
  • Vanilla extract
  • Arrowroot
  • Baking soda
  • Salt
  • Cacao powder, unsweetened
  • Chocolate protein powder
  • Coconut oil
  • Gluten-free baking flour
  • Almond flour, blanched
  • Chocolate chunks

Note that we decided to use chocolate chunks instead of chocolate chips for this recipe. You can use either, but we find chunks bring a richness and gooeyness to the table (literally!) that chips don’t quite nail! 

How to Make Chocolate Chunk Vegan Protein Cookies

This is a very easy recipe!

Start by adding the vegan butter, applesauce, coconut sugar, and vanilla extract to a mixing bowl, then mix. Next, add the arrowroot, baking soda, salt, cacao powder, and protein powder, and mix again.

Then add the coconut oil and mix again. Finally, add the gluten-free baking flour and almond flour, and mix again.

When this is all mixed, fold in as many chocolate chunks as you want, then transfer the mixture to the fridge for an hour or so before baking.

In the meantime, preheat the oven to 350°F. When you are ready to bake, use a cookie dough scooper to scoop even-sized balls and transfer them to a baking tray.

Bake in the oven until the edges start to crisp slightly. This actually happens very quickly – around 7 minutes, so keep a close eye on them while baking.

As soon as you take them out, even though they are slightly crisp on the edges, the cookies will be very soft to the touch. Allow them to cool for a few minutes before moving them. They will firm up during this time.

Serve with a glass of your favorite plant milk and enjoy!

How to Store Chocolate Chunk Vegan Protein Cookies

These delicious protein cookies will last for up to 3 days when stored on the counter at room temperature. Keep them in an airtight container after allowing them to cool completely.

Can You Freeze Chocolate Chunk Vegan Protein Cookies?

If you want to extend the life of these cookies, you can freeze them for up to 3 months.

Allow them to cool completely, then freeze them individually first, before transferring to a freezer bag or freezer-safe container, placing parchment paper between the cookies for easier removal.

Why are these Cookies Healthier?

Good question! These cookies are entirely plant-based and contain no refined sugar, with plenty of nutrients from the almond flour (particularly vitamin E and magnesium) and applesauce.

Then you have the protein powder, which makes these cookies more satiating as well as providing the building blocks for muscle, hair, skin and many processes in the body.

They are certainly healthier than the everyday cookie you may find sold in stores. However, it is still best to treat these like the snack they are rather than a core part of your nutrition plan.

This is because they still contain coconut sugar, chocolate chunks, and coconut oil – when eaten to excess, none of these three ingredients are particularly beneficial!

  • 1/2 cup vegan butter

  • 1/4 cup applesauce
