Easy-to-Make Banana Crepes

Sorry egg – there’s no room for you in this recipe! We have used the culinary power of mashed banana to create our crispy, silky, and utterly delicious banana crepes.

These delicate crepes are perfect served for breakfast or dessert, rolled or folded with sweet fillings like fruit and whipped coconut cream or chocolate, or enjoyed on their own with a dusting of powdered sugar.

What are Crepes?

Crepes, or – to use the French spelling – crêpes, are wafer-thin French pancakes made from a simple batter, then fried in a pan or on a hot plate.

Originating from Brittany, in western France, crepes are said to have been created in the 13th century thanks to a happy accident. The story goes that a housewife spilled a thin layer of porridge onto a hot cooking surface. She tried it, loved it, and the crepe was born!

Whether or not that’s true, we can’t say. But we do know that crepes have been served for hundreds of years, both in France and around the world.

They are traditionally stuffed and topped with sweet treats, from fruit to ice cream, although savory crepes are served with things like cheese, vegetables, and seafood.

Are Banana Crepes Vegan?

Traditional crepes are not vegan as they are made with milk and eggs.

But our banana crepes are vegan! We use mashed banana as the egg replacer, which delivers the same consistency as traditional crepes, with a natural sweetness.

Yes, providing you use a gluten-free flour!

Are Banana Crepes Easy to Make?

Yes, they are! All you need to do is blend the ingredients and fry them. The most difficult part is the frying, as you need to ensure the crepes are the right thickness and the pan is the right temperature.

This may take a bit of time to perfect.

What are Banana Crepes Made Of?

Our banana crepes are made using just a handful of easy plant-based ingredients.

You will need:

  • Flour
  • Almond milk
  • Coconut sugar, optional
  • Banana, mashed
  • Water
  • Vanilla extract, optional
  • Salt
  • Vegan butter, for frying

If you want to make this recipe sugar-free, simply replace the coconut sugar with monk fruit.

How to Make Banana Crepes

Making banana crepes is simple!

To start, add all the ingredients (except the vegan butter) to a blender, and blend until incorporated. Make sure there are no lumps!

Next, warm a non-stick frying pan over medium/high-heat and add in some vegan butter. Scoop some of the batter onto the pan to form a thin layer (the amount will depend on the size of your frying pan), then tip the pan and rotate it to spread the batter as thinly as possible around the pan.

Cook for about 2-3 minutes on the first side. You’ll know it’s ready to flip when the bottom starts to unstick from the pan easily.

Cook the crepe for about another minute on the second side, and repeat the process until you have no batter left! Serve warm with whatever toppings or fillings you like.

Tips for the Best Banana Crepes

Aim to cook the crepes over an even, medium heat. Pre-heat the pan so it’s hot (although not searing), then reduce the heat to medium when you start cooking. If your first crepe burns, then you know the pan was too hot! Adjust accordingly.

You can serve your crepes with pretty much any filling or topping. We suggest trying some of the following:

  • Light dusting of powdered sugar (or powdered monk fruit)
  • Chopped banana
  • Berries
  • Chocolate spread
  • Coconut whipped cream
  • Nut butter
  • Jam

How to Store Banana Crepes

If you have made too many, simply stack your crepes (separating each of them with a sheet of wax paper) then store in an airtight container in the refrigerator. 

Can You Freeze Banana Crepes?

While you technically can freeze them, it is often more hassle than it is worth. We suggest making them fresh each time!

Can You Make Banana Crepes Ahead of Time?

These crepes are always best served hot from the pan, but if you want to make them ahead of time they will last for up to a day in the refrigerator before drying out. Note that the banana may change the color of the crepes.

When you are ready to use them, reheat them in a pan on a low heat, or for around 20 to 30 seconds in the microwave.

How Long Do Banana Crepes Last?

These crepes are best enjoyed fresh. If you leave them for too long, they will start to change color due to the banana. But if you have a lot left over, you can leave them in the refrigerator for up to a day before they start to dry out.

Are Crepes the Same as Pancakes?

Crepes and pancakes are often used interchangeably, although there are a few subtle variations between the two!

The main difference is that pancakes require a raising agent, such as baking powder or baking soda, while crepes do not. Because of this, crepes are thinner and crispier, which makes them perfect for rolling or folding with a filling.
